A rainy day is my idea of a perfect baking day and since it rained yesterday, I decided to take advantage of the weather and bake these. The last thing I baked was a cake for Alex’s birthday in March so it was really great to finally find some time to dust off the mixer and make something.

Chocolate Cupcakes with Buttercream Frosting
I made these cupcakes last month just because I felt like it; sometimes it’s nice to make a little special something, even if you do not have a reason to do so! The cake itself is rich and balances well with the sweet, but not too sweet frosting, which I decided to dye a light pink. These cupcakes were delicious, made the kitchen smell amazing, and I particularly loved having these pretty pink beauties displayed on the kitchen counter!

Peanut Butter Surprise Cookies
When I came across this recipe I knew I had to try it out since Alex loves peanut butter cups, which is evident from the cake I made him last year for his birthday.

Lazy Day Love Cake
You know those days when you don’t have anything planned or anywhere to be and you don’t feel like getting dressed or leaving the house? A couple of weeks ago I had one of those days and it also happened to be raining out, which made it the perfect day for baking. However, since I did not feel like leaving my apartment, I had to find a simple, easy recipe to make with ingredients I already had lying around. I stumbled across this chocolate cake recipe, and it has been by far the easiest thing I have ever baked, and there was very little to clean up as well, which is always a plus! You literally mix the ingredients in the baking pan and then put it straight in the oven – no mixing bowls needed! (Yet, this also means that the cake will not dislodge from the pan cleanly so it must be served in the pan.) The recipe suggests pairing the cake with this simple buttercream frosting, which I did. I also decided to dress the cake up a bit, and since the cake was going to be enjoyed by Alex (like most of the things I bake) I decided to put a heart on it for my love.

Baked Vanilla Doughnuts with Vanilla Glaze
This was my first time baking doughnuts and I was pleasantly surprised by how easy they were to make. I used this recipe, which is perfect for making a pan’s worth (6 doughnuts), and the vanilla glaze is particularly wonderful! I think doughnuts might be my new favorite thing to bake!

Jam Thumbprint Cookies
The first thing I ever baked was a batch of thumbprint cookies when I was a kid and I had not baked them again until last week. This recipe was the simplest one I could find and not only was it very easy to follow, the end result was delicious!

Pumpkin Cookies with Powdered Sugar Glaze
Yesterday when my last class of the week ended, and my Thanksgiving break officially began, I came home and baked these pumpkin cookies. Not only are these cookies absolutely delicious, they are also very easy to make – not a bad start to Thanksgiving break!
Peanut Butter Toffee Cookies
It’s a baking post! Can you believe it?! I was looking through the archives earlier and saw that it had been over three months since I had posted a baking-related entry! I definitely missed baking, but I think Alex was the most upset about the absence.
When we moved to the city back in August we downsized considerably, especially with the kitchen (you can see our former spacious kitchen here). I was worried that our new kitchen, with its minuscule oven and sink, as well as complete lack of counter space, would make the baking process a complete nightmare. Last week when I finally got around to baking for the first time in our new place, I figured it would make the most sense to bake something simple and easy and thought that this cookie recipe (which Alex strongly advocated for) would be a great one to try out. Even with our new tiny, cramped kitchen, I have to say – it feels good to be baking again!
